It would be nice if brick-and-mortar phone retailers gave a service to copy SIMs from one to the other or to another medium (e.g., flash/USB drive or media card), but, I have a feeling that would cost an arm and a leg, and there would be no guarantee that the result would be readable on any other device, much less the new phone.
